How To Consume Coconut Oil – plus, Coconut Oil Candy Recipes!

One of the most frequently asked questions I get about coconut oil is how to “eat” enough of it each day. Many readers email me or leave comments on my 160 Uses for Coconut Oil post wondering how I consume it. Well – ask and you shall receive!

Here are 16 ways to consume coconut oil:
1.   Take it straight of a spoon, three times per day (before meals). You can either keep it in a more solidified state or you can consume it in a liquid state. Simply a matter of preference.
If you are unable to take your coconut oil “straight up,” here are a few suggestions as to how you can get your daily dose.
2.   Cook with it! I use coconut oil for sautéing vegetables, for pan frying meat and fish, for cooking eggs, and for all of my stir fry dishes.
3.   Bake with it! Coconut oil makes any baked good even more delicious and nutritious. Simply use it in place of the oil or butter called for in the recipe.
4.   Add it to smoothies or blended drinks! This is a great way to get it into children.
5.   Add it to beverages! It works well in hot beverages like tea, coffee, hot chocolate, egg nog, or chai lattes. Just be aware that the oil will float to the top in a hot beverage. Since oil conducts heat, those first few sips might be a tad too hot.
6.   Use it in salad dressings! I personally prefer to use a 50/50 mix of coconut oil and olive oil. It tastes great with tarragon or rice vinegar.
7.   Pop popcorn with it!
8.   Add it to a bowl of soup!
9.   Use it in place of butter on toast, bagels, muffins, scones, etc…!
10.  Add it into a bowl of warm oatmeal!
11. Add it to cooked pasta, rice, or other warm grain dish!
12.  Pour melted coconut oil over anything you would put butter on or in – like potatoes or steamed vegetables!
13. Mix it into peanut butter for use on sandwiches, dipping apples or celery in, or just eating off a spoon!
14. Add coconut oil into yogurt, mixing well!
15. If you fry foods, use coconut oil instead of vegetable or corn oil!

Coconut Oil Candy Recipe #1

Ingredients

2 tablespoons blackstrap molasses

2 tablespoons coconut oil

2 tablespoons nut butter

Directions·

Melt the coconut oil.  Add the nut butter. Mix well then add the molasses and mix some more. You can pour it into a glass dish (lightly coated with coconut oil) or silicone mini muffin cups and refrigerate until hard. If using a glass dish, cut into one inch squares.

Coconut Oil Candy Recipe #2

Ingredients

1 cup coconut oil, melted

1 cup unsweetened cocoa powder

1/2 cup honey

Directions

Pour the coconut oil into a bowl, and sift in the cocoa, stirring to blend evenly. Stir in the honey, and mix until smooth. You can pour it into a glass dish (lightly coated with coconut oil) or silicone mini muffin cups and refrigerate until hard. If using a glass dish, cut into one inch squares.

Coconut Oil Candy Recipe #3

Ingredients

1/2 cup coconut oil, melted

1/2 cup maple syrup

1/2 cup cocoa powder

1 teaspoon vanilla

1/4 teaspoon salt

Directions

Stir all ingredients together. Line cookie sheets with parchment paper or foil. Pour chocolate mixture in quarter sized disks on the sheet. Place the cookie sheets in the freezer until frozen through. Place the frozen chocolate disks in a freezer container and keep frozen until ready to eat.

A couple of important notes!

Never microwave coconut oil to melt it! Microwaves destroy all of the beneficial properties. Instead, place the desired amount of coconut oil in a glass jar or measuring cup. Place the glass in a bowl of hot water. It will melt fairly quickly.
Coconut oil can be kept in the refrigerator during warmer months if you prefer it in a solid state.
